Tequila and mezcal are crafted from the heart of the agave plant. For tequila, only Blue Weber agave is used, while mezcal can be made from various agave species. The process begins with harvesting mature agave plants, which are then cooked—tequila in ovens, mezcal traditionally in underground pits, giving it a smoky flavor. The cooked agave is crushed, fermented, and distilled to extract the alcohol. Tequila undergoes a second distillation, while mezcal may be distilled more. The result is a rich, complex spirit with a deep connection to Mexican tradition.
